Rotisserie Chicken Salad Croissant Sandwiches

Most of you know that I have been spending a ton of time helping my mom with her new house. During this process she has been feeding me on the regular. I told mom, that I was gonna have to go home just to cook or I’m not gonna have anything to post on my blog AND my boys are going to starve…hehe! Well, instead of skipping out on my daughterly duties, I decided I would gather up some food to take and make for my mom. You know…kill 3 birds with one stone. Help my mom, make some food (cause we gotta eat), take pictures and write up a blog post!

I LOVE chicken salad and your sandwiches look delicious! I honestly don’t know if I’ve ever tried it with apples before, but now I want to! We’ll definitely be giving this a try the next time we hit up Costco and grab a rotisserie chicken!

    • This recipe keeps very well! Don’t put the chicken salad on the croissants until ready to serve. I can eat on this for days! Thanks for stopping by!

  2. I am definitely making this recipe! I have a similar one, but it has grapes in it, which I do not like as much. I love the idea of Craisins! Thanks for linking up at Merry Monday.

I can eat chicken salad just about any way it’s made. I bet you’ll like the dried cranberries! So good!

Hey Ali! Great question. I have made these sandwiches for many showers. I would use 24 small crescents or 12 large crescents. I couldn’t find the small crescents for one shower and used big crescents cut in half. Still taste just as delicious. I promise they will be delicious! Thank you for stopping by! Hope this helps!

Can I make the night before and assemble just prior to the shower? Also my mom does a similar recipe with fine chopped walnuts. Do you think that would be a tasty addition?

    • lacier77 says:

Hey Trish. Yes ma’am you can. If I make a batch for home, I eat on it all week. I bet the walnuts would be great and give a nice crunch. You could mix it up without the walnuts and sprinkle a few on a spoonful of the chicken salad and give it taste just to be sure.

We made these for my baby shower a year ago and I still get asked for the recipe! I definitely recommend preparing the night before (minus the croissants as Lacie mentioned). Try to do your grocery shopping a few days before.

Hey Janie! I’m so glad it was a success. I made these recently for an event and had to leave super early in the morning so I prepared the night before. All I had to do the morning of was assemble. I love your comment! Thank you!
