Bacon Cauliflower Salad…I bet I had you at bacon!

I love anything with bacon! My husband isn’t a big fan of cauliflower but he absolutely loves this salad! He actually will go back for a second helping. I have a feeling it’s all because of the bacon. This Bacon Cauliflower salad is the perfect make ahead addition to your next cookout, potluck, or holiday. I promise it will be a hit…even with those that aren’t fans of cauliflower.

Bacon Cauliflower Salad is a huge hit and feeds a crowd! Assemble in layers ahead of time and mix all together right before serving.

Cauliflower is one of those versatile foods that can really take on the flavor of what it’s mixed with. This salad gets devoured anytime I serve up this dish and it will feed a crowd.

My Aunt Linda has been making this salad for as long as I can remember! You never have to wonder what she will bring to any of our family functions! She graciously gave me the recipes years ago and I’ve been making it ever since!

Bacon Cauliflower Salad

  • Servings: a crowd
  • Difficulty: easy

Ingredients

  • 5 heaping tablespoons mayo
  • 1/2 cup grated Parmesan cheese
  • 1 lb bacon
  • 1 onion
  • 1 head of cauliflower
  • 1 head of lettuce

Directions

Fry bacon, drain, and crumble. Chop the onion, cauliflower, and lettuce into small pieces. Mix all ingredients in a bowl until well combined and chill until ready to serve.

Tip…If you are making this salad ahead of time, layer each ingredient in your dish and refrigerate. Layer the ingredients according to the ingredient list. When it’s time to eat, just mix it up until well combined and serve.

    I fiddled with this recipe just a bit. I add a cup of dried cranberries and used feta cheese in place of the Parmesan. The sweet taste of the cranberries really added to the flavor of this delicious salad.

    I make a modified version of this recipe. I have a layer of chopped fresh mushrooms and another layer of frozen green peas. For the dressing I use half Greek Yogurt and half mayo till I have 1 1/2 cups to top it with. Season it with Lawry’s for flavour. we love how the flavours meld together.

  3. Its faster if you take the bacon, still in the package and slice the package open on three sides, on the top and take a good sharp knife and cut the bacon into small pieces before frying. No crumbling and because you can just stir it, it cooks faster!

      Hi Rinda! That’s a great tip! I always throw big batches of bacon in the oven. I honestly hadn’t thought of cutting it then frying. I must give that a try. The best part of throwing it in the oven is…I can do other things and not constantly tend to the bacon. Another friend gave me a tip long ago that you can freeze bacon and cut off what you need when you need it for recipes. Thanks so much for stopping by!
