Well, my kiddo just turned 11 years old. It is so bitter sweet. He keeps getting older and more independent which is sweet but I’m losing my baby which is bitter. Birthdays call for cake and ice cream! The kiddo loves him some ice cream. (he would eat ice cream every night if we let him.) He isn’t the biggest fan of cakes, but he will eat it. Garrett does love cookies and cream and ice cream sandwiches. So, what’s the compromise? Make your own! Why not make an ice cream cake your kid will love and you can customize the flavors to your child’s taste? That’s exactly what I did! This easy homemade ice cream sandwich cake was just what the kiddo ordered! Did I mention it was way cheaper than store bought?!
So, I have a little secret…I was totally intimated to try this idea. I’ve never tried anything like it before. Let me tell you, there is no need to be intimidated!! It is super easy and everyone loves loves loves!

Easy Homemade Ice Cream Sandwich Cake
Ingredients
- 1 box devil’s food cake mix (plus ingredients)
- 1 large egg
- 1 gallon ice cream, desired flavor
- Cooking spray
- plastic wrap
- parchment paper
Directions
Preheat oven to 350 degrees. Spray 2 12×17 in baking sheets with cooking spray. Cover each baking sheet with parchment paper leaving an overhang. Prepare the cake mix according to package directions and add 1 large egg. Divide batter between the 2 baking sheets. Spread evenly all the way to edges. Bake for 9 to 10 minutes. Cool completely. Cover top of cake with parchment paper. Place a 13×9 inch pan on top of parchment paper and cut your cakes the size of the pan. Remove excess cake. Freeze cakes for 30 minutes.
While you are working on the cakes, set your ice cream out to thaw. Place plastic wrap inside the 13×9 inch pan leaving overhang on all sides. Scoop all of the ice cream into the plastic wrapped lined pan. Spread evenly. Place plastic wrap on top of the ice cream and using your hands, smooth out and fill in any gaps. Place ice cream dish in the freezer until firm.
Place one cake onto a clean baking sheet and remove parchment paper. Using the plastic wrap remove the ice cream from 13×9 pan and place on top of cake. Remove plastic wrap. Top ice cream with remaining cake and remove parchment paper. Using a knife, trim any excess cake. Optional…Using a straw punch out holes on top cake to give the effect of an ice cream sandwich. Cover and freeze for 2 hours before serving.

My kiddo loves the cake to ice cream ratio in this recipe. It takes some time to make due to freezing but it gives you a chance to make other food or get your house clean in between. Bonus, you can munch on the excess cake too!
