Squash, squash, everywhere squash! You may be growing your own or have a friend or family member with it coming out of their ears. (I love this because I’m always sent home with a bunch.) Everywhere I visit, there is a basket of zucchini and squash sitting on the counter. Since squash is extremely abundant this time of year, I’m always looking for new ways to eat it. I love the sweet flavor from squash and this recipe compliments it fabulously.
My favorite thing about this recipe, it kinda gives me that feel of Christmas dressing but in a totally different way. I get the comfort food feel of dressing but decked out with a sweet summer squash flavor.

Squash Casserole
Ingredients
- 2 boxes Jiffy cornbread mix-prepared
- 8 yellow squash, diced
- 1 can cream of chicken
- 1 can cream of mushroom
- 2 sticks butter, melted
- 1 small onion, chopped
- salt and pepper to taste
Directions
Preheat oven to 375 degrees. Spray a 9×13 baking dish with cooking spray. Mix squash, cream of chicken, cream of mushroom, butter, chopped onions, and salt and pepper in a large bowl. Mix in crumbled cornbread. Stir until well combined. Pour into baking dish and bake for 45 mins or until golden brown.

Lacie’s Easy Peasy Pleasy Tips…
- Make up a pan of cornbread for dinner one night earlier in the week, and throw in an extra pan to bake up for this casserole.
- This recipe can be easily split in half. Use a smaller casserole dish and use a can of cream of chicken and mushroom. It’s one can with both. (love this one!)
This Squash casserole is a total hit with my family. They gobble it up. I only have 3 in my immediate family so I make the half version. I hope you give it a try and love it as much as we do.
