This recipe would do wonders on your breakfast menu but on this particular day I was serving up brunch in honor of my grandma. Grandma Sue’s favorite meal was brunch. So on this day of remembrance of my grandma’s birthday, me and my girls became ladies who brunch.
Let’s keep it real…I love brunch! Brunch means it must be a Saturday and I got to sleep in. Sleeping in is the best but the only way I can do that is if I make a dish that’s easy to throw together and even better if I can prep the night before. This Strawberry French Toast Casserole is that perfect recipe.
What a fun brunch. Myself, mom, sister, and a couple girlfriends got together for some cooking, laughing, baking, and picture staging. I got to show off my new Thyme & Table goodies from Walmart. Plus they all got to witness my process of blogging first hand. From cooking to plate to picture taking. But I’m getting ahead of myself.
Let’s get back to this super easy Strawberry French Toast Casserole. You’ll have to read the recipe to see what my super easy shortcut is but I’ll give you a hint on how to make the best custard…
The base is eggs, milk, heavy cream, sugar, and vanilla.
You pour that creamy decadent mixture over the top and refrigerate overnight or for at least 2 hours.
Pull it from the fridge while the oven heats up, bake, eat and enjoy.
Strawberry French Toast Casserole
Ingredients
- 2 16 ounce boxes cinnamon french toast bites
- 2 cups sliced strawberries
- 6 eggs
- 1 1/2 cups milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1 tablespoon vanilla
Directions
Place the cinnamon french toast bites into a 13×9 casserole dish. Mix in sliced strawberries. Crack 6 eggs in a large bowl. Add milk, heavy cream, sugar, and vanilla. Using a whisk, mix all ingredients until well combined. Pour over your cinnamon french toast bites and strawberries. Refrigerate over night or for at least 2 hours. Remove from the fridge and preheat oven to 350 degrees. Bake for 50 minutes or until custard has set. Serve warm. Eat and enjoy!

The Strawberry French Toast Casserole was scrumptious & a great dish for brunch, social or family gatherings. It was particularly meaningful since it was in honor of Grandma’s birthday.
