Y’all….I recently had the best time hanging out with good friends. If you follow me on Instagram then you probably already know that we camped in the snow for first time ever. It was a wonderful weekend only to be made better by the FOOD! One of the reasons for this trip was to cook up some deliciousness with my buddy Brian for an upcoming Foodie Friday post on the ARWB site. That recipe will be coming soon but in the meantime you HAVE to try this recipe. Er my gosh, it is sooooo good! When I taste tested, I knew I had to share this recipe on the blog.
So apparently it’s been a long time controversy over who created this recipe between my good friend Brian and Stacy. They have gone back and forth for years. (I don’t care who created this masterpiece as long as I get to eat!) Low and behold Brian conceded and finally claimed it Stacy’s recipe. He has lovingly nick named Stacy…Grubby. I have yet to get the full details on how that name came about but it is my new mission. When you see the recipe title you will now understand why it’s titled Grubby’s Easy Etouffee. One of these days I will find out how this nickname was born! Until then, we can cook Grubby’s delicious Etouffee, eat, and be content!
GRUBBY's Easy Etouffee
Ingredients
- 1 large onion, diced
- 1 bundle green onions, diced
- 1 bundle celery hearts, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 large package raw mushrooms, sliced
- 1 stick butter
- Rotel, 1 can (or two cans for more spice)
- Cream of Chicken Soup, 2 family sized cans
- Cream of Mushroom Soup, 2 family sized cans
- 1 pound andouille sausage or smoked sausage, sliced
- 1 pound craw fish tails or raw peeled shrimp
- 1 rotisserie chicken, shredded
- Creole Seasoning
Directions
Heat large pot on medium. Saute all veggies in butter for 10 to 15 minutes or until tender. Mix in soups and Rotel. Add the sausage and cook on simmer for 1 hour, stirring frequently. Add crawfish or shrimp and rotisserie chicken. Let simmer another 15 minutes. Add creole seasoning to taste. Serve over rice or noodles.

This recipe is absolutely delicious and will feed a crowd. Don’t have a crowd to feed but still want to try this recipe? Grubby’s Easy Etouffee freezes beautifully. Just cook it up and freeze the leftovers for another day.

Would it still be considered etouffee if one were to SKIP the seafood? Hubby’s allergic and I’ve never cared for.
It would still be considered delicious! Lol! Hey Lora it may not be an Etouffee but it would be a great soup with rice.
