Riceland’s Boil-in-Bag Rice takes the guess work out of cooking rice. You literally throw a bag of rice into a quart of water, bring to boil, and drain. Easy Peasy Pleasy right??!!
Easy Peasy Pleasy Tips
- Follow box directions for 1 bag (2 servings of rice) or throw all 4 bags in a large pot with 4 quarts of water. Then follow box directions and all 4 bags will cook up perfect to be added to a casserole.
- Shred cheese and dice vegetables before starting to cook.
- While cooking rice and bacon, shred the rotisserie chicken.
- Want to the serve this recipe as a side dish? Leave out the rotisserie chicken and serve along your favorite protein.
- My cast iron skillet is a favorite when making up a bechamel sauce, gravy or rue.
- A large cast iron skillet makes the perfect casserole dish.
- Baking in individual cast iron skillets makes the perfect 1 serving dish.
Cheesy Chicken and Bacon Rice Casserole
- 1 14 ounce Riceland Boil-in Bag
- 1 pound bacon
- 1 rotisserie chicken
- 1/4 cup bacon drippings
- 1/2 cup all purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 cup shredded Gruyere cheese
- 1 cup grated Parmesan chhese
- 5 baby portabella mushrooms, sliced
- 1 tablespoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- chopped fresh parsley
- fresh baby spinach (optional)
Preheat oven 350 degrees. Cook 4 bags of Boil-in-Bag Riceland Rice according to package directions. (See EPP notes above on cooking 4 bags at once.) Fry bacon while rice cooks. Shred the rotisserie chicken. Crumble cooked bacon, reserve. In a large skillet, heat bacon grease over medium high heat. Whisk in flour. Cook and whisk for about 3 mins. Mixture should be smooth. Add chicken broth and milk, stirring to combine. Whisk like crazy for about 3 to 4 mins or until mixture is smooth and thickening. Pour mixture in a large bowl. Add cheese, crumbled bacon, mushrooms, garlic, salt, and pepper. Add in rotisserie chicken and cooked rice. Stir until well combined. Pour into a greased casserole dish. Bake for 30 minutes or until lightly browned and bubbly. Remove from oven and and top with fresh chopped parsley and grated Parmesan cheese. Stir in fresh baby spinach or serve a side salad. Eat and enjoy!
