Cheese Steak Quesadillas Are A Crowd Pleaser

Quesadillas are in regular rotation at my house. I must say they are one of my favorite things to eat and cook. You just can’t get much easier than meat, veggies, and melted cheese in a flour tortilla. Sometimes I want something a little different from the normal Tex-Mex quesadilla. By changing up the filling, I can rotate quesadillas in and out even more. If you love steak or cheese steak sandwiches you will love this recipe!

Quesadillas are in regular rotation at my house but sometimes I need a change. Cheese Steak Quesadillas are the perfect twist on this Tex-Mex classic.

Cheese Steak Quesadillas

Ingredients

Directions

For the steak-combine the sliced steak, 1 teaspoon season salt, steak seasoning, and 1/2 teaspoon pepper in a ziplock bag. Mix until the seasoning has evenly coated the steak. Heat 1 tablespoon of oil in a cast iron skillet over medium high heat. Sear sliced steak in batches for 1 to 2 minutes per side depending on how done you like your steak. Do not over crowd the pan. Add 1 tablespoon of oil if the pan gets to dry.

While the steak is cooking, get your veggies sauteing.

For onions and peppers- Heat 1 tablespoon oil over medium heat in a large skillet. Toss in sliced onion and bell pepper. Sprinkle with 1 teaspoon season salt and 1/2 teaspoon pepper. Saute veggies for 8 to 10 minutes stirring frequently.

Now assemble the quesadillas. Heat large skillet or griddle on medium high heat. Spray with non-stick cooking spray. Place flour tortilla on pan. Lay 4 slices of Provolone cheese evenly on the flour tortilla. On one side, top with steak. On the opposite side, top with the sauteed peppers and onion. Once the cheese has melted, fold the flour tortilla in half. Remove from the skillet and cut into 4 wedges. Eat and enjoy!

Lacie’s Easy Peasy Pleasy Tip…By leaving the flour tortilla open in the pan, the cheese will melt on both sides and the tortilla will brown evenly all at the same time. This will cut the heating time of the quesadilla in half.

    Going to make these tonight!!!! Is it 100% necessary to use a cast iron? All I have are non stick pans…

      Hey Betty! Thank you for stopping by! I use the cast iron cause I can get the heat really high and get a good sear on the meat (no juices flowing out) and it literally cooks up in mins! Try it with the nonstick but make sure and put a little oil in the pan before you heat it up. I would love to hear how it works out in the nonstick pan, so let me know!

    Thanks for a new twist on an old favorite. I just made them for an early supper and I really like them (the rest of the family too). I also like that the recipe allows me to stretch a small amount of beef (I only used a bit over a half pound) to feed four hungry people.

    Looks absolutely wonderful . But was wondering if Chicken could be substituted for the steak as my husband and son have a hard time digesting beef ?I have seen both steak and chicken in restaurants so just was curious.

    Found your recipe through Pinterest this afternoon and made it for dinner tonight. Delicious!!! The meat and veggies are seasoned perfectly. My son asked if I would send the “Pin” to him so he can make it when he is out on his own (21yrs old). We will definitely be making this again!
