Did Double D Breasts catch your attention? I thought it might! Don’t worry folks, I’m not gonna take up your time talking about the baby feeders. But if you want to talk CHICKEN then you’ve come to the right place.
Double Duty Chicken Breasts! (hehe!) We all buy packages of chicken at the store that have these enormous breasts. You know the chicken breast… the one that can feed two people. Well, have I got a double duty chicken idea for you! It’s the kinda idea that literally doubles the chicken and doubles the meal.
First things first…Let’s double some chicken. It’s simple to cut a chicken breast in half. Basically you are butterflying the breast but cutting all the way through to end up with 2 cutlets instead of 1. Using a sharp knife, start at the thickest end of the chicken breast and cut all the way through to the opposite end. There you have it, 2 chicken cutlets.
Now, let’s get cooking!…It’s chicken cutlet time. If I’m gonna dredge and bread chicken cutlets for one meal, I might as well dredge and bread for two! The recipe calls for 4 chicken breasts cut in half giving you a total of 8 chicken cutlets. I have a family of 3 so this actually gives my family enough protein for 2 meals and and a couple of leftover lunches.
Dredged and Breaded Chicken Cutlets
Ingredients
- 4 chicken breasts cut in half butterfly style
- 2 eggs
- 2 cups panko bread crumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped parsley
- salt and pepper
- olive oil or canola oil
Directions
- Salt and pepper both sides of your chicken cutlets.
- Pour a thin layer of oil in a nonstick skillet and turn to med high.
- Using a large shallow dish, whisk 2 eggs.
- Mix panko, parmesan cheese, parsley and a dash of salt and pepper together in shallow baking dish.
- Dredge chicken cutlets in egg.
- Place your chicken cutlets in panko mixture making sure to coat all sides. I always press the cutlet into the panko for better coverage.
- Check your oil. Put a pinch of panko in the oil and if it starts to sizzle you are ready.
- Cook the breast in batches 3 to 5 mins on each size. Place cutlets on a baking sheet with a baking rack to rest.
Tip…Since cooking so many cutlets you will need to add a little more oil with each batch.

Opened Faced Ham and Provolone Chicken
Ingredients
- 4 Dredged and Breaded Chicken Cutlets
- Thin sliced smoked ham
- 6 slices Provolone Cheese
Directions
- Preheat oven to 350 degrees F.
- Place chicken cutlets on baking sheet with a baking rack.
- Cut 2 slices of provolone cheese in half and place 1 half on each cutlet.
- Layer ham on top of cheese.
- Add a whole slice of provolone cheese over the ham.
- Bake for 10 mins.
- Turn the oven to broil and watch closely.
Chicken is done when cheese is bubbly and golden brown.
Tip…Placing the small piece of cheese on the cutlet first acts like a glue and keeps the ham from sliding off when cutting your chicken.

Time to tackle that second Double Duty Chicken Recipe. Everybody loves Chicken Parm. This is a semi homemade recipe. I have no quarrels with using a jar of store bought spaghetti sauce. This recipe is made for people on the go. But you can always use a batch of your own homemade sauce.
Semi Homemade Chicken Parm
Ingredients
- 4 Dredged and Breaded Chicken Cutlets
- 1 Jar of Spaghetti Sauce
- Shredded Mozzarella, Cheddar, and Grated Parmesan Cheese
- Parsley
Directions
- Preheat oven to 350 degrees F.
- Place chicken cutlets on baking sheet with a baking rack.
- Spoon a couple tablespoons of spaghetti sauce on top of cheese.
- Sprinkle mozzarella, cheddar and parmesan cheese over the sauce
- Add a sprinkle of chopped fresh parsley.
- Bake for 10 mins.
- Turn the oven to broil and watch closely.
Chicken Parm is done when cheese is bubbly and golden brown.
Tip…Use the leftover spaghetti sauce with pasta as a side dish.

For my sides, I get some water boiling while the ovens preheating. I then throw some pasta in the water when I put my chicken in the oven. While that’s cooking I mix up a small salad and make some cheesy garlic bread!
