Have you ever been in the mood to make cookies from scratch only to realize you are missing a key ingredient? Say like flour or sugar? That’s exactly what happened to me. I was really in the mood for cookies. I walked to the pantry ready to pull out all of my ingredients and realized…I didn’t have enough flour. I know I could ask my next door neighbor since we are always swapping ingredients (thanks Abby!). But, in this particular case I noticed I had a box of cake mix on the shelf. I got to thinking…cake mix has all the basic ingredients already. All I would need is a few more components and I would have some great cookies, or so I thought. I have tested and tested and tested again until I have the perfect recipe to make the perfect cookies from a box of cake mix.
Seriously, you don’t need to fret! I have the recipe perfected. My poor boys have had to taste all of my failures. So far every cookie batch has tasted good, just didn’t look very appealing. With that being said, I have taken the guess work out of the equation and made the perfect cookie from a cake mix. This particular recipe uses a specific box of cake mix called Cinnamon Bun…
but I’m also sharing how to make regular cookies at the end of this post. You get a 2 for 1 today!
Let me give you some pointers before sharing this recipe. I use caramel bits in these cookies. You cannot mix the caramel bits into the the batter like chocolate chips. If you do the cookies will seriously stick to the pan. I am speaking from experience on this one.
Take a little of the mixed cookie dough and place some caramel bits on top then add some more cookie dough to the top. Roll into a ball around the caramel bits. Super easy! Now let’s get down to the recipe!
Cinnamon Bun Cake Mix Cookies
Ingredients
For the Cookie Dough
- 1 Box Cinnamon Bun Cake Mix
- 1/2 cup vegetable oil
- 2 eggs
- caramel bits, optional
For the Cinnamon Topping
- 1/4 cup butter, melted
- 6 tablespoons packed brown sugar
- 1 1/2 teaspoons ground cinnamon
Directions
Preheat oven to 350 degrees. Mix all ingredients for the cinnamon topping until combined. The longer the mixture sets, the thicker it will become which is what you want. While the cinnamon topping thickens, mix all ingredients for the cookie dough together, except caramel bits, until combined. Take a small spoon full or small scoop of dough and add caramel bits to the center. Now add another small spoonful to the top of the caramel bits and roll into a ball, keeping the caramel bits fully in cased in the cookie dough. Cookie dough balls should be an inch or so in size. Place on an ungreased cookie sheet and bake for 12 to 15 mins or until slightly browning around the edges. Let set on pan for 2 mins then remove to a wire rack for cooling. Place your thickened cinnamon topping in a plastic baggie and a snip a small piece out of the corner. Now pipe your cinnamon filling onto the cookies. Eat and Enjoy!

These cookies are so very simple! They taste like a cinnamon roll and makes me think it’s ok to eat cookies for breakfast. If these cookies look easy then you have to check out some even easier cookies and you only need 4 ingredients! They are so yummy!
4 Ingredient Cake Mix Cookies
Ingredients
- 1 Box Cake Mix
- 1/2 cup vegetable oil
- 2 eggs
- 2 cups chocolate or peanut butter chips
Directions
Preheat oven to 350 degrees. Mix together cake mix, vegetable oil, and eggs in a large bowl until combined. Add in 2 cups total of your favorite chips and stir until evenly distributed. Place heaping spoonfuls onto an ungreased cookie sheet. Bake for 12 to 15 mins or until slightly browning around the edges. Let set on pan for 2 mins then remove to a wire rack for cooling. Eat and enjoy!
