Easy Glazed 4 Ingredient Pumpkin Cookies are a must have this time of year because Fall is finally here. I love the slightly cooler temperatures and leaves falling from the trees. I love that when the air turns crisp, my oven temp rises. It means baking season is upon us. The weather gives me a clue that it’s time for the season of giving thanks and to put out some pumpkin recipes.
Let me tell you a little about what inspired this Easy Glazed 4 Ingredient Pumpkin Cookies recipe. The story is funny and the recipe is fabulously easy! If you can get your hands on a box of cake mix and some store bought frosting then this recipe is for you!
I have this girlfriend, who I won’t name (
Melissa Polk, that’s her name!), who loves everything pumpkin. When I say everything pumpkin, I mean everything! A couple of years back, I had helped this “unnamed” friend with a project. She being the aahmazing person that she is, sent me an Amazon gift card for helping. I told her time and time again that I was helping a friend and needed nothing in return. So, when I unexpectedly received the gift card, I immediately came up with a plan.
Remember, I said she loves pumpkin? I take that gift card and purchase every pumpkin thing I can find and have it shipped to her. Hey, I told her not to give me anything. When she received the package, and figured out it was from me, we laughed until we cried. I have a feeling she learned her lesson. A friend is a friend. We don’t owe each other anything except friendship.
In the honor of the season of giving thanks and my girlfriend who loves pumpkin, I give you this super easy Glazed 4 Ingredient Pumpkin Cookies recipe made from a box of
cake mix with glaze made from store bought frosting recipe.

Lacie’s Easy Peasy Pleasy Tips
- I use a small Cookie Scoop. It looks like a mini Ice cream scoop. I scoop out one scoop of cookie dough and place on the cookie sheet. I then scoop out another and place on top of the first scoop of cookie dough. Press down with your fingers until it looks like a perfect round shape.
- I place the cookie dough on the cookie sheet…3 one way and 4 lengthwise. 12 per pan.
- When you melt the frosting, it should be be very runny.
- Flip your cookie upside down and dunk in the frosting. Pull up and quickly flip over. Let set on a rack
- Want to add orange glaze? Frost the first 24 cookies with the melted cream cheese frosting. Then follow the instructions for gel food coloring to make orange and add to the last half of the frosting. Reach your desired color, Dip and dunk your cookies.

Easy Glazed 4 Ingredient Pumpkin Cookies
Ingredients
- 2 boxes Pumpkin Cake Mix
- 1 cup Vegetable Oil
- 4 Eggs
- 1 can Cream Cheese Frosting
Directions
Preheat oven to 350 degrees. Mix together cake mix, vegetable oil, and eggs in a large bowl until combined. Place heaping spoonfuls onto cookie sheets 1 inch apart. Bake for 12 mins. Let set on pan for 2 mins then remove to a wire rack for cooling. Cool completely. While cookies cool, put frosting in a microwave safe dish. Microwave for 30 seconds. Stir. Dip the top of cooled cookies in melted frosting. Swirl and turn over quickly. Let rest on wired rack until frosting is set. Eat and enjoy!
