So, this past weekend the “3 Ring Circus” (that’s what I lovingly refer to as my family of 3) hit the road to visit my brother and his family. One of the things that made this trip so special was the fact that we got to stay on their houseboat. Boy, did we have fun! If you’ve ever been boating or anywhere that requires food in a cooler you know it is essential to make the food count. I am always looking for ways to make the food on the boat delicious, easy, and no cleanup. We are all trying to eat a bit healthier right now. So for this trip, I put my thinking cap on and came up with these Easy TO GO Salads. From salad, to container, to cooler, to trash. Nothing to carry home for cleanup. You are gonna want all the details!

Yummy Way To Use Up Summer Squash
Squash, squash, everywhere squash! You may be growing your own or have a friend or family member with it coming out of their ears. (I love this because I’m always sent home with a bunch.) Everywhere I visit, there is a basket of zucchini and squash sitting on the counter. Since squash is extremely abundant this time of year, I’m always looking for new ways to eat it. I love the sweet flavor from squash and this recipe compliments it fabulously.
Panini Salad Bar…Party Food Made Easy!
Entertaining should be fun and not a hassle, right? I agree! My favorite part of entertaining is the food. Sometimes, I may stress myself just a bit over the menu. Ok, who am I kidding, I may stress myself a lot. The cooking prep work isn’t what gets me stressed. (I like to make that part as easy possible.) It’s usually coming up with what to cook next. I hate when I get in a food rut. That’s where my idea of a Panini Salad Bar was born. Easy prep and delicious food equals more fun with my friends!

I love anything with bacon! My husband isn’t a big fan of cauliflower but he absolutely loves this salad! He actually will go back for a second helping. I have a feeling it’s all because of the bacon. This Bacon Cauliflower salad is the perfect make ahead addition to your next cookout, potluck, or holiday. I promise it will be a hit…even with those that aren’t fans of cauliflower.
