Squash, squash, everywhere squash! You may be growing your own or have a friend or family member with it coming out of their ears. (I love this because I’m always sent home with a bunch.) Everywhere I visit, there is a basket of zucchini and squash sitting on the counter. Since squash is extremely abundant this time of year, I’m always looking for new ways to eat it. I love the sweet flavor from squash and this recipe compliments it fabulously.

I attended an amazing volunteer breakfast a few months back and got to taste many scrumptious treats. One that stood out to me was this Easy Overnight Breakfast Casserole. I remember taking a bite and another trying to figure out what it was that made it so delicious. I had to have the recipe, so I hunted till I found out Tami Buchanan had made the casserole. Then I found out, besides the salt and pepper, there are only four ingredients! Tried and True and this recipe is in regular rotation.

Easy Homemade Ice Cream Sandwich Cake
Well, my kiddo just turned 11 years old. It is so bitter sweet. He keeps getting older and more independent which is sweet but I’m losing my baby which is bitter. Birthdays call for cake and ice cream! The kiddo loves him some ice cream. (he would eat ice cream every night if we let him.) He isn’t the biggest fan of cakes, but he will eat it. Garrett does love cookies and cream and ice cream sandwiches. So, what’s the compromise? Make your own! Why not make an ice cream cake your kid will love and you can customize the flavors to your child’s taste? That’s exactly what I did! This easy homemade ice cream sandwich cake was just what the kiddo ordered! Did I mention it was way cheaper than store bought?!
