I’m on Dr. Seuss overload! If you follow on Instagram you will see I have been up to my eyeballs working on Read Across America Week and Dr. Seuss’s birthday celebration at the kiddos school. After Thanksgiving and Christmas we always have a ton of leftovers…intentionally. One of my favorite ways to use up those leftovers is with these super easy and delicious Ham and Cheddar Melt Rolls.

It’s just not the holidays unless you are eating pie. My all time favorite pie is Pecan Pie and my all time favorite dessert is Cheesecake. This pie is the best of both worlds. In my opinion, you can’t go wrong when combining these 2 yummy desserts into one.
