So, I’ve been a bit under the weather lately. My wonderful mother and friends have offered to bring me soup, but I declined. No way would I expose anyone to this awful crud! The one bright spot…I started craving Chicken Chipotle Corn Chowder. I must say…I haven’t always been the biggest soup fan. In the past, soup would be at the bottom on my list of things to eat. That is, until my sister in law introduced me to this recipe years ago. I officially became a soup defector right then and there! I love love love this soup and have been making it ever since! Caesar Parmesan Crusted Chicken
Summer is slowly fading away and the kids are back in school. I don’t know about you but this first week back to school has wiped me out. I’ve really been cooking the easiest meals imaginable. One of those easy go to recipes is my Caesar Parmesan Crusted Chicken. Sometimes, I need a fresh take on the plain old boring chicken breast. I love Caesar salad and Caesar dressing so why not add that flavor to the chicken itself.

If you know me at all, you know that I love Chicken Cordon Bleu. It’s my most favorite food in the whole world. My step-dad got me hooked when I was a child. I can remember him making Chicken Cordon Bleu with ham, Swiss cheese, and using crushed corn flakes as a breading. I love that hint of sweet from the cornflakes mixed with Swiss cheese. Over the years I have adapted and changed his recipe. I’ve used bread crumbs for the crust and the ever present toothpicks to hold it all together. I’ve baked it, fried it, and re-purposed it in many ways. I stick to the basic principles but love to test out new ways to make this classic dish.
